Abstract

 油ちょう時に、十分に膨化し、衣材同士が経時的に互いに接着し難く、しかも揚げ物用具材への衣付け作業も容易で、強固に付着させることができる、揚げ物用衣材を効率的に得ることが可能な製造法、該方法で得られる軽量な揚げ物用衣材、該衣材を利用した揚げ物冷凍食品及びその製造法を提供する。本発明の揚げ物用衣材の製造法は、アミロースを除去した澱粉及び/又はもち種澱粉を特定量含み、かつ特定割合以上がα化された芯材と、油脂粉末とを含有する吸湿芯材原料を混合し、混合した吸湿芯材原料と、水を含む溶液とを特定割合で混合し、吸湿芯材を調製し、該吸湿芯材と被覆用粉末とを混合し、被覆吸湿芯材を調製し、該被覆吸湿芯材と水を含む溶液とを特定割合で混合し、長径5~8mmの衣材を含む長径0.01~16mmの粒度分布を有する衣材を調製することを特徴とする。
