Abstract
A method for making macaroni products of improved food value includes preparing a dry mixture of prescribed components, mixing the dough in a macaroni press with water, vacuuming thereof, pressing, forming products, cutting and drying, sorting and packing thereof. In doing so at the stage of preparing dry prescribed components a preliminary mixture of bakery wheat flour and transglutaminase enzyme is prepared, and at the stage of kneading dough pumpkin seed flour, bakery wheat flour and the prepared preliminary mixture of the bakery wheat flour and transglutaminase enzyme are mixed.
