Abstract

Die vorliegende Erfindung bezieht sich auf ein Verfahren zur Herstellung von Teigwaren, insbesondere aus stärke- und klebereiweisshaltigen Rohstoffen wie Mehl, Griess und/oder Dunst, insbesondere unter Verwendung einer Vorrichtung (17), die eine Dosiereinrichtung (1), einen Mischer (2), insbesondere einen Schnellmischer, eine Teigbereitungsmaschine (3) mit wenigstens einem Walzenpaar und eine Teigpresse (4) umfasst. Das Verfahren enthält die folgenden Schritte: Mischen, Eindosieren in den Mischer (2); Mischen und Benetzen der Rohmaterialmischung innerhalb des Mischers (2) zu einem Rohteig; Weiterleiten in die Teigbereitungsmaschine (3), Kneten in der Teigbereitungsmaschine (3); Formen des Rohteigs in der Teigbereitungsmaschine (3) zu einem Teigband (9); Weiterleiten des Rohteiges in die Teigpresse (4); Entgasen des Rohteiges, Komprimieren des Rohteiges; Formen des Rohteiges, insbesondere zu Teigwaren; und Trocknen der Teigwaren. Darüber hinaus stellt die Erfindung auch eine Vorrichtung (17) zur Durchführung des vorgenannten Verfahrens sowie eine Verwendung der Vorrichtung (17) zur Verfügung.
