 牛乳等に由来する動物性脂肪分を含まず、牛乳等にアレルギーのある人にも適した、ケフィア及びその製造方法を提供すること。  デンプンを含有する植物性素材から培養されてなる植物性ケフィア、並びに、デンプンを含有する植物性素材を液化して植物性素材溶液を製造する液化工程、植物性素材溶液に含有されるデンプンを糖化する糖化工程、植物性素材溶液にケフィアグレインを接種する接種工程、及び、植物性素材溶液中でケフィアグレインを培養する培養工程を含んでなる植物性ケフィアの製造方法。
