Abstract

Disclosed are: a kefir which contains no animal fat derived from milk or the like and is suitable for a person having milk allergy or the like; and a method for producing the kefir. Specifically disclosed are: a plant-derived kefir which is produced from a starch-containing plant-derived material by culture; and a method for producing a plant-derived kefir, which comprises: a liquefaction step of liquefying a starch-containing plant-derived material to produce a plant-derived material solution; a saccharification step of saccharifying the starch contained in the plant-derived material solution; a seeding step of seeding a kefir grain to the plant-derived material solution; and a culture step of culturing the kefir grain in the plant-derived material solution.
