Description

The present invention relates to the food industry, in particular to the production of improved confectionery products from natural raw materials with various additives of biologically active substances, namely candy caramel with therapeutic and prophylactic properties, including in the form of hard candies. The composition for the preparation of candy caramel includes caramel mass, citric acid, aromatic substances and biologically active additives in a given ratio. The caramel mass contains isomalt and/or granulated sugar, starch syrup in a given ratio. As a dietary supplement, natural ingredients are used: propolis, cedar oil, cedar resin. The invention expands the range of confectionery products from natural raw materials with therapeutic and prophylactic properties, makes it possible to obtain caramel candies, including those with reduced sugar content, which have vitamin, tonic and immunostimulating properties, increase physical and mental performance and are used, in particular, in the field of means of healing and preventive effects on of a person, including in case of injuries, increased physical exertion, as well as for the treatment and prevention of diseases of the upper respiratory tract, oral cavity, increasing immunity and other diseases that have anti-inflammatory, antiviral, antibacterial, antiseptic, immunostimulating, restorative, analgesic and anti-edematous effects. Known candy caramel has insufficient biological value of the product as a whole. In addition, the disadvantage is the high calorie content due to the high sugar content.

Known product "Licorice lollipops and method for their production" RU 2103876. Known invention: candy caramel contains granulated sugar, molasses, citric acid and essence. Moreover, it additionally contains a lyophilized powder of licorice root extract with a moisture content of 0.9-1.0% and a glycyrrhizic acid content of 27-28%.

The disadvantage of the known product is the low antiviral activity and narrow scope, due to the content of only licorice root extract, which is used only in the treatment of colds.

The closest to the claimed technical solution in terms of the composition of ingredients is the composition of fortified candy caramel, including granulated sugar, molasses, citric acid, Pineapple flavoring and a vitamin supplement in the form of a mixture of vitamins C, B1, B2, B5, B6, B12, Bc, PP, N, E (see RF patent No. 2140161, publication date 10/27/1999).

The disadvantage of the known solution is the presence in the composition of vitamins and flavors of non-natural origin, as well as the lack of biological activity and therapeutic and prophylactic properties.

Currently, there is an active need to create confectionery products from natural ingredients that not only have good taste, but are also enriched with vitamins, microelements, which have multifunctional therapeutic and prophylactic properties, which, if necessary, can largely compensate for the deficiency of vitamins, microelements and have preventive orientation of a wide spectrum of action on the psychological and physical condition of a person.

Modern compositions of confectionery products with therapeutic and prophylactic action, which are currently used, mainly have a directed effect in relation to a narrow spectrum of effects. In cases where it is necessary to prevent or prevent various diseases (for example, colds, infectious or cardiovascular diseases), correct vitamin and microelement deficiencies, and maintain a healthy lifestyle, a person needs to use many different means that are not always effective enough. The task to be solved by the claimed invention is the development of a composition of completely natural candy caramel with a set of biologically active substances for a healing and prophylactic effect on a person, which has a more effective effect in solving various problems associated with human health and has broad functionality, as well as more a pronounced and rapid therapeutic and prophylactic effect while improving consumer properties, which will include plant components that are safe for humans and do not have harmful side effects.

Common features of the proposed composition and the prototype described above is the use of a vitamin supplement in the form of a mixture of vitamins C, B1, B2, B5, B6, B12, Bc, PP, H, E.

The technical result, which manifests itself in solving the problem, is expressed as follows:

- completely natural composition of candy caramel with high organoleptic characteristics;

- increasing the biological value due to the content of biologically active substances (propolis, cedar resin, cedar oil);

The technical result is achieved by the fact that the proposed composition contains the following ratio of components, wt. %: citric acid - 0.18%, aromatic essence - from 0.10 to 0.15% and a biologically active additive, while the following is used as a biologically active additive: propolis with a dosage - from 0.10 to 0.35%, cedar resin with a dosage of 0.08 to 0.6%, cedar oil with a dosage of 0.21 to 1.0% of the mass ratio and caramel mass - everything else.

In a particular case, the caramel mass contains isomalt as a sweetener in the following ratio, wt. %: isomalt 52.05-62.0; molasses 35.72-45.67. The use of such a sugar substitute as isomalt (E953) as the basis of the caramel mass makes it possible to reduce the calorie content of caramel and improve its dietary properties (240 kcal per 100 g of isomalt, 387 kcal per 100 g of sugar (unlike its analogue), provides a confectionery product low glycemic index and probiotic properties.
