Abstract

La présente invention concerne un procédé de préparation de pommes de terre frites qui comprend les étapes suivantes réalisées dans une cuisine centrale:- donner une forme, par découpe, à des pommes de terre entières pour obtenir des morceaux de pommes de terre coupées, - frire les morceaux de pommes de terre coupées, - injecter une ou plusieurs sauces dans les morceaux de pommes de terre coupées et frites, - comgeler les morceaux de pommes de terre coupées, frites et contenant une ou plusieurs sauces injectées, et - conditionner pour la distribution; le procédé comprenant une étape de préparation sur le lieu de consommation qui consiste à chauffer les morceaux de pommes de terre coupées, frites, contenant une ou plusieurs sauces injectées et congelées. De cette manière, on augmente la saveur des pommes de terre frites obtenues, au moyen des sauces ajoutées.
