Abstract
La présente invention concerne des microcapsules contenant un noyau hydrophobe et une enveloppe à base de protéine. L'invention concerne également un procédé de préparation de capsules à base de protéine comprenant les étapes suivantes : la formation par des agrégats de protéines activées dans une solution aqueuse contenant un matériau hydrophobe d'une couche à l'interface de la phase dispersée, et la réticulation des agrégats de protéines activées. Les particules encapsulées de protéine sont particulièrement appropriées pour des applications alimentaires, d'alimentation pour animaux, cosmétiques et pharmaceutiques.
