Abstract
Procédé et dispositif de préparation de produits naturels cristallisés par enrobage de sucre, tels que des fleurs par exemple, les produits (10) étant d'abord stabilisés, immédiatement après leur récolte, par pulvérisation d'une s solution de gomme a rabique en ( 12) e t par séchage sous v ide e n (18), puis étant enrobés de sucre par pulvérisation en (36) d'une solution saturée de sucre et de sucre en grains en (38), et par séchage à l'air chaud en (40). L'invention permet une bonne préservation de la forme, de l'aspect, des couleurs et des qualités aromatiques et gustatives des produits cristallisés.
