Abstract

Procédé pour la destruction de microorganismes et enzymes par application combinée de chaleur et d'ultrasons sous-pression (Procédé MTS) dans des conditions contrôlées de pression, temps, température, fréquence et amplitude de sonication. L'application d'ultrasons sous-pression combinée au traitement thermique génère par synergie l'effet destructeur sur les microorganismes et les enzymes, permettant ainsi de réduire le temps et/ou la température de traitement. Le rythme de destruction des micro-organismes et des enzymes soumis à la Mano-Thermo-Sonication suit une cinétique de réaction de premier ordre, ce qui permet de calculer les traitements de stérilisation ou d'hygiène à appliquer pour obtenir un effet prédéterminé. Une fois établies les conditions préalablement calculées de vitesse du flux, température, pression et intensité de sonication dans la chambre de Mano-Thermo-Sonication, le produit à traiter est pulsé à travers ladite chambre.
