Abstract

FIELD: food industry. SUBSTANCE: method involves addition of an acid at amount 0.03-0.06% of dry matter and aluminium salts (aluminium-potassium alum, aluminium sulfate or chloride) at amount providing pH value in a mixture 2.0-3.0 to the parent starch or starch-containing raw (or their 40-% suspension in water) at stirring. Consumption of salts is 0.5-3.0% of ready material dry matter. The obtained mixture is subjected for thermic treatment at 120-200 C at simultaneous extrusion of mass at shift rate 200-1500 s. After extrusion the ready material is ground and sieved through a sieve having holes 0.25 x 0.25 mm followed by package. Method ensures to decrease duration of technological cycle from 120 to 15 min. EFFECT: increased gluing capability of dextrin, accelerated process, improved quality of product, decreased consumption of reagents.
