Сущность изобретения заключается в том, что получение водорастворимых автолизатов дрожжей осуществляется в присутствии олеиновой кислоты и гипохлорита натрия в количестве 0,1-0,3% к весу абсолютно сухих дрожжей. Водорастворимая часть автолиза сушится с получением продукта с содержанием аминного азота не менее 6% и нуклеиновых кислот не более 2%.
