PROCEDIMIENTO PARA LA CONSERVACION DE CARNE QUE CONSISTE EN APLICAR A LA SUPERFICIE DE LA CARNE UN MATERIAL SOLIDO CAPAZ DE LIBERAR ACIDO ACETICO EN PRESENCIA DE HUMEDAD. LA CARNE QUE SE VA A TRATAR HABRA DE ESTAR ESENCIALMENTE SECA Y SE AÑADE MATERIAL SOLIDO SUFICIENTE PARA PROPORCIONAR DE 0,19-1,88 MG/CMBS2 DE ACIDO ACETICO. LOS COMPUESTOS PREFERIDOS SON LOS COMPLEJOS DE ACETATOS Y ACIDO ACETICO, PARTICULARMENTE DIACETATO DE SODIO. LA APLICACION SE PUEDE EFECTUAR ESPOLVOREANDO O MEDIANTE ASPERSION ELECTROSTATICA. EL METODO TIENE APLICACION A CUALQUIER CLASE DE CARNE (VACUNO, PORCINO, DE AVE, PESCADO, MARISCO), CON LO QUE LA DURACION EN ALMACENAMIENTO, DETERMINADA POR EL PROCEDIMIENTO NORMAL DE CUENTA SOBRE PLATINA PUEDE LLEGAR A SER MAS DEL DOBLE DE LO NORMAL.
