Abstract

The invention relates to the food industry, namely to concentrates for nonalcoholic drinks and a process for their preparation.The concentrate for nonalcoholic drink contains a concentrated mixture, obtained by mixing the infusion from aboveground parts of echinacea or melissa and fruit and/or berry juice in the following component ratio, in mass %: infusion from aboveground parts of echinacea or melissa 20...36 and fruit and/or berry juice 64…80, and subsequent concentration to the content of dry substances of 55…80%.The process for preparation of the concentrate for nonalcoholic drink, according to the invention, includes the preparation of an infusion from dried aboveground parts of echinacea and melissa by infusion in water at a temperature of 88…90°C for 20…30 min in a ratio of 1:15, respectively, followed by filtration, addition to the resulting infusion of fruit and/or berry juice and concentration of the obtained mixture until the attainment of the dry substance content of 55…80%.
