Abstract

본 발명은 L-글루탐산 및 염기성 아미노산을 포함하며 수용액 상태에서 pH 6.5-8.0인 아미노산 조미료 조성물에 관한 것이다. 본 발명의 조미료 조성물은 L-글루탐산 아미노산을 기본 성분으로 하고 L-글루탐산과 조합을 이루어 관능과 염미가 개선된 복합 조미료 성분으로서, 염기성 아미노산을 선택하고, L-글루탐산과 염기성 아미노산의 복합물에 대한 pH를 일정 범위로 정교하게 조절함으로써 관능이 매우 우수한 복합 아미노산 조미료를 제공한다.
