Abstract

An oven (1) for the industrial baking of food, particularly bread, pizzas or the like, comprising at least one frame (2) for supporting a food baking chamber (3) and at least one combustion chamber (11) for at least one solid fuel for the thermal transfer of heat to the baking chamber (3), the combustion chamber (11) being provided with at least one opening (13) for introducing the solid fuel; means (14a, 14b, 14c) for feeding the solid fuel into the combustion chamber (11) to introduce the solid fuel into the combustion chamber (11) upon reaching a minimum threshold temperature in the combustion chamber (11) and/or in the baking chamber (3). The oven further comprises means (15a, 15b, 15c) for stocking the solid fuel that define at least one region (17a, 17b, 17c) for unloading at least one predefinable dose of the solid fuel which is connected to the feeding means (14a, 14b, 14c) for the programmed introduction of the dose in the combustion chamber (11).
