Abstract

L'invention a pour objet de proposer une composition d'agent de détartrage pour l'industrie alimentaire. La composition possède une excellente aptitude à dissoudre le tartre principalement composé d'oxyde de fer ou d'hydroxyde de fer; ne produit pas d'effet sur la qualité de l'acier inoxydable ou du caoutchouc; et excelle en termes de stabilité au stockage. A cet effet, l'invention porte sur une composition d'agent de détartrage pour l'industrie alimentaire dont les ingrédients actifs sont les composants (a) à (c) aux rapports suivants sur la base de la composition totale : le pH (JIS Z-8802:1984 « Méthodes de mesure de pH ») d'une solution aqueuse diluée à 1 % en poids de la composition est inférieure à 3 à 25°C : (a) 5 à 60 % en poids d'un acide organique; (b) 15 à 80 % en poids d'acide L-ascorbique et/ou d'acide érythorbique; (c) 0,01 à 6 % en poids d'un composé de l'urée. L'invention porte également sur un procédé d'utilisation de la composition d'agent de détartrage.
