Abstract
2-アミノ-3-メチル-4-ケトペンタン酸から4-ヒドロキシイソロイシンを生成する、微生物由来の酵素の存在下で2-アミノ-3-メチル-4-ケトペンタン酸またはその塩を還元反応に供し4-ヒドロキシイソロイシンを生成させる工程を含むことを特徴とする、4-ヒドロキシイソロイシン又はその塩の製造方法。L-イソロイシンジオキシゲナーゼ及び4-ヒドロキシ-L-イソロイシンデヒドロゲナーゼの存在下で、L-イソロイシンを反応させる工程を含む、2-アミノ-3-メチル-4-ケトペンタン酸又はその塩を製造する方法。4-ヒドロキシ-L-イソロイシンデヒドロゲナーゼの活性が低減又は欠失するように改変されている、L-イソロイシンジオキシゲナーゼ活性を有する細菌の存在下で、L-イソロイシンから(2S,3R,4S)-4-ヒドロキシ-L-イソロイシン又はその塩を製造する方法。
