Abstract

L'invention vise à proposer un procédé de production de lait fermenté ayant une dureté suffisante, quelles que soient les conditions de chauffage de lait écrémé dans le cas de l'utilisation de lait écrémé pour produire un lait fermenté. A cet effet, l'invention porte sur un procédé qui comporte : une première étape de désoxydation, consistant à abaisser la concentration en oxygène d'un lait écrémé; une première étape de pasteurisation, consistant à pasteuriser thermiquement le lait écrémé ayant été traité à la première étape de désoxydation comme décrit ci-dessus; une étape de déshumidification, consistant à éliminer l'humidité du lait écrémé ayant été traité à la première étape de pasteurisation comme décrit ci-dessus; l'étape de préparation de mélange de yaourt, consistant à préparer un mélange de yaourt à l'aide du lait écrémé qui a été traité à l'étape de déshumidification comme décrit ci-dessus; et l'étape de fermentation, consistant à faire fermenter le mélange de yaourt ainsi préparé.
