Abstract

Procédé d'emballage de produits carnés coupés en dés, hachés ou ayant une consistance visqueuse. Le procédé comprend les étapes suivantes: (a) introduction du produit carné dans un sac souple ayant au moins une face sensiblement plane et une ouverture de remplissage pouvant être fermée qui communique entre l'intérieur du sac et une amenée de produit carné, (b) séparation de l'ouverture et du stock, (c) fermeture de l'ouverture, (d) congélation du sac et du produit carné qu'il contient. L'invention décrit également un sac se prêtant à l'emballage d'un produit carné. Le sac comprend une première paroi (12), une deuxième paroi (14) et au moins deux parois latérales souples (16, 18). Chaque paroi latérale se situe entre la première et la deuxième paroi, avec lesquelles elle est cousue. Le sac comporte une ouverture de remplissage (20) qui communique entre l'intérieur du sac et la paroi extérieure (12). L'ouverture de remplissage (20), conçue de façon qu'on puisse introduire de la viande dans le sac, peut se fermer. Les parois latérales sont suffisamment souples pour que le sac puisse prendre une position soit aplatie, soit gonflée. L'ouverture de remplissage convenant pour le sac décrit comporte un rebord à monter sur une paroi du sac et un bec creux tubulaire comprenant une lèvre à son extrémité distale. Le bec, relié au rebord par un dispositif de liaison bistable, peut bouger entre une position rentrée relativement stable dans laquelle, à l'usage, la lèvre se trouve sensiblement au niveau ou au-dessous de la paroi du sac, pour en faciliter l'empilage, et une position sortie relativement stable. Le dispositif de liaison est relié au bec au niveau ou à proximité de l'extrémité proximale du bec, le bec ayant une position telle qu'il ne dépasse pas sensiblement plus à l'intérieur du sac que le dispositif de liaison.
