  • the travel of bodies toward end 70 is retarded by the second length 62 of rollers 48g to 481 and directed by another water jet (not shown) into a collection tray. At this point, substantially all of the viscera has been removed leaving only the adductor muscles.
  • the microwave generator 12 of the first embodiment is split into its main constituent components, being an electromagnetic radiation cavity resonator in the form of a microwave cavity 72, an electromagnetic radiation source in the form of a magnetron 74, and control electronics 76.

  • the spray jets 84 are located on opposite sides of the upper surface 10 of the conveyor belt in order to spray the opposite sides of each scallop with hot water.
  • An enclosure 88 surrounds the spray jets 84 and a length of the conveyor belt 8. The enclosure 88 substantially prevents the loss of water beyond its confines and directs the sprayed water through a pipe 90 to a filter 92. After passing through the filter 92, the returned ater is pumped by pump 94 for recirculation through the boiler 86 and spray jets 84. Gaseous waste products from the boiler 86 are vented through a flue 96. Any waste products removed from the shells of the scallops while passing between spray jets 84 is carried by the water to a primary trash trap and sump 98.

  • the sheet 104 includes a length 106 located within the enclosure 88 which is adapted to allow liquid from the spray jets 84 to pass therethrough. Most conveniently, this is achieved by forming holes through the sheet 104 for the length 106 or alternatively, inserting a planar mesh in the sheet 104 for the length 106. The holes or mesh are sized to ensure that a scallop will not fall through. This allows hot water from the spray jets 84 to strike opposite sides of the scallops passing therebetween.
  • the direct spaying of hot water on opposite sides of the scallop ensures a high rate of heat transfer and thus quick temperature rise of the shell itself. This is particular advantageous as it allows the shell to be heated very quickly without any significant rise in the temperature of the body within the shell. Furthermore, as the water is sprayed at an angle substantially normal to the opposite sides of a flat lying shell, the water deflects away from the periphery of the shell thus minimising water penetration into the shell itself which has the undesirable effect of increasing the temperature of the body.
  • a water temperature of approximately 105° and a spray jet pressure of approximately 140 kilopascals has been found to provide rapid heat transfer to the scallops. Vapour released from the sprayed water is trapped within the enclosure 88 which provides pre-heat to the shell andminimises oxidation of the flesh.
  • the tray 6 of the first and second embodiments is replaced with a rotating brush 108 and outlet of the hopper 4 is shaped to arrange the scallops into three separate lines.
  • the brush 108 picks up the leading scallops in each of the three lines, the outlet of hopper 4 and places them flat into corresponding compartments 102.

Abstract

L'invention se rapporte à un appareil (2) de traitement de mollusques comprenant une trémie (4) permettant de stocker une provision de mollusques et une brosse rotative (108) placée au niveau d'un orifice de sortie de la trémie (4) pour alimenter en mollusques une bande transporteuse (8) située en-dessous dudit orifice. La bande transporteuse (8) transporte les mollusques le long d'un parcours de traitement coïncidant avec une surface supérieure (10) de la bande transporteuse (8). Des jets de pulvérisation (84) disposés le long du parcours de traitement (10) aspergent d'eau chaude les mollusques à partir de côtés opposés. La température de l'eau est telle que le corps de chaque mollusque se détache sensiblement de sa coquille. Une enceinte (88) entoure les jets de pulvérisation (84) afin de prévenir toute perte d'eau au-delà de ses limites, et oriente l'eau aspergée à travers un tuyau (90) jusqu'à un filtre (92). Après être passée à travers le filtre (92), l'eau recyclée est pompée par une pompe (94) afin de circuler à nouveau à travers une chaudière (86) et les jets de pulvérisation (84). Une paire de cylindres (16, 18) à rotation antagoniste sont disposés de façon que les mollusques tombant d'une extrémité (20) de la bande transporteuse (8) soient dirigés entre les cylindres. Ces derniers agrippent les mollusques et les coincent contre une grille (22). La grille (22) permet aux corps séparés des mollusques de la traverser pour se placer sur une surface de glissement (24) située sous ladite grille et être dirigés vers un dispositif d'éviscération sous-jacent (28). La grille (22) dirige également les coquilles des mollusques vers un séparateur à tambour (32) afin de séparer tout corps demeurant dans les coquilles de celles-ci. Les corps sont séparés par le séparateur à tambour et tombent dans une trémie (40), puis passent à travers une première ouverture (42) pour pénétrer dans le dispositif d'éviscération (28). Les coquilles sortent d'une extrémité inférieure du séparateur (32) en passant à travers la trémie (40), puis passent par une seconde ouverture (42) pour tomber dans un bac (46) à déchets.
