Abstract

Se prepara un producto de goma de mascar crujiente, que tiene un crujido similar al provisto por el azúcar granulado, en un producto de goma de mascar a base de azúcar, introduciendo en el interior de una fórmula de goma de mascar un aditivo de isomalta granulado. Más particularmente, la presente invención se relaciona con gomas de mascar sin azúcar que son crujientes. Una goma de mascar caracterizada porque comprende: a) uno o más elastómeros, edulcorantes y saborizantes; y b) un aditivo de isomalta granulado que tiene un tamaño de partícula mayo que malla 50 (0.300 mm) incorporado internamente dentro de dicha goma, en una cantidad tal que dicho aditivo proporciona un crujido a dicha goma durante el mascado de la misma. También puede contener uno o más colorantes. El aditivo se prepara calentando isomalta, disuelta en agua, a una temperatura de 130ºC o más elevada, enfriando para formar un producto de isomalta sólido y granulando el producto de isomalta sólido a un tamaño de partícula superior a 0.300 mm. Un proceso para la preparación de un producto de goma de mascar, se caracteriza por: a) preparar un aditivo de isomalta granulado, granulando isomalta sólida a un tamaño de partícula superior a 0.300 mm; b) mezclar dicho aditivo con una composición de goma de mascar, de manera que dicho aditivo se incorpora internamente dentro de dicho producto de goma de mascar en una cantidad efectiva que produce crujido a dicho producto de goma de mascar, durante el mascado de la misma.
