Способ производства молочного сахара, предусматривающий сбор, резервирование сыворотки, очистку от несахаров, сгущение, кристаллизацию лактозы, центрифугирование и сушку кристаллов, отличающийся тем, что очистку молочной сыворотки от несахаров проводят совместной коагуляцией с казеином путем внесения в сыворотку обезжиренного молока или пахты в количестве 5-50% от массы смеси с кислотностью, обеспечивающей доведение реакции среды до изоэлектрического состояния белкового комплекса, при температуре 90-95oC с продолжительностью выдержки 15-20 мин.A method for the production of milk sugar, which involves the collection, reservation of whey, purification from non-sugars, thickening, crystallization of lactose, centrifugation and drying of crystals, characterized in that the purification of whey from non-sugars is carried out by coagulation with casein by adding skim milk or buttermilk in the amount of 5 -50% by weight of the mixture with acidity, ensuring the reaction of the medium to the isoelectric state of the protein complex, at a temperature of 90-95 o C with a duration of exposure 15 -20 minutes.
