Abstract
1. A composition containing fats, proteins and carbohydrates, comprising a combination of curcumin, demethoxycurcumin and bisdemetoxycurcumin, the combination being solubilized in polar oil having a hydrophilic-lipophilic balance (HLB) of from about 0.7 to about 14, with a mass ratio of bisdemetoxicurcumin to curcumin is from about 1: 1 to about 1: 7, and the mass ratio of bisdetoxicurcumin to demethoxycurcumin is from about 1: 1 to about 1: 2.5.2. The composition according to claim 1, characterized in that the polar oil has an HLB value of from about 1 to about 8 and is from about 10 to 100% by weight of fat in the composition. The composition according to claim 2, characterized in that said composition is an aqueous emulsion. The composition according to claim 3, characterized in that the combination of curcumin, demethoxycurcumin and bisedetoxicurcumin is from about 0.002 to about 1.0% by weight of the composition. The composition according to claim 3, wherein the polar oil comprises a medium chain triglyceride oil. The composition according to claim 3, characterized in that said composition contains from about 0.1 to about 17 wt.% Medium chain triglyceride oil. The composition according to claim 3, characterized in that the mass ratio of bisdemetoxycurcumin to curcumin is from about 1: 3 to about 1: 7.8. The composition according to claim 3, characterized in that the mass ratio of bisdemetoxicurcumin to demethoxycurcumin is from about 1: 1 to about 1: 2.0.9. The composition according to claim 3, characterized in that the composition does not contain unsolubilized curcumin, unsolubilized demethoxycurcumin and unsolubilized bisdemet
