Abstract
325,039. Kennedy, D. J. Nov. 30, 1928. Coffee preparations ; cocoa preparations.-Coffee in the berry or in granular form is coated with a product of the cocoa bean while the coffee is hot. Preferably the green berry is first steeped in dilute citric acid solution, and it is then roasted until it changes colour or exudes moisture. From 20 to 25 per cent by weight of cocoa or chocolate is then added and the mixture shaken vigorously until the coffee, is thoroughly coated with the cocoa bean product, the coated product being then subjected to continued roasting. Coffee. that is to be sold in granular form is first roasted and ground while it is hot and the cocoa or chocolate added to the hot ground product. After the coffee is coated by agitation the product is roasted, and packed when subsequently cool. The treated coffee may have an additional cacoa or chocolate coating immediatly following its removal of the roaster.
