Abstract
Appareil à buée pour four de boulangerie-pâtisserie, et four de boulangerie-pâtisserie correspondant L’invention concerne un appareil à buée pour four, notamment de boulangerie-pâtisserie, dans lequel l’appareil à buée comporte un premier moyen de fourniture de buée (1) avec : - un réservoir (4) pour contenir un volume déterminé d’eau, par exemple défini par un capteur de niveau, - un moyen de chauffage (6) du volume d’eau contenu dans le réservoir (4), par exemple une résistance électrique, et - un capteur de température (18) configuré pour déterminer la température de l’eau contenue dans le réservoir (4). L’appareil à buée comporte également un moyen de commande du moyen de chauffage (6), le moyen de commande recevant en entrée la température de l’eau fournie par le capteur (18), le moyen de commande étant configuré pour maintenir l’eau à une température proche de la température d’ébullition en l’absence d’instruction de fourniture de buée, et pour faire chauffer l’eau à une température supérieure ou égale à la température d’ébullition lors d’une instruction de fourniture de buée. L’invention concerne également un four, notamment de boulangerie-pâtisserie, comprenant un appareil à buée tel que décrit précédemment. Figure pour l’abrégé : Fig. 1
