Abstract

Mould for the manufacture of moulded cheeses is composed of a heat-resisting thermoplastic material, such as polyropylene, instead of the conventional metal. The moulds, with lateral and longitudinal sides and a base, are cast from the thermoplasttic material and can withstand repeated sterilisations. Passages with a diameter of 3mm are provided in the side walls, for drainage purposes; drainage holes with a diameter, of 1.5mm are also provided in the base. To facilitate demoulding the walls of the cavities are inclines at an angle of 2-3 degrees whilst all the corners are rounded. Handles are fitted to the ends of the unit so that the latter can be transported and turned over during the cheese-making process. The mould is easily sterilised and can be made in one piece; it has a long life and the non-oxidisable surface is resistant to chemical reactions.
