Claims (15)
- Dispositif pour mélanger une boisson (3), en particulier en recyclant une partie d'une boisson finie (3, 3', 3"), avec :- un réservoir (5) pour recueillir une phase de mélange aqueuse (7) dans laquelle sont contenus les ingrédients nécessaires au mélange de la boisson (3) et qui présente une teneur en eau supérieure à la boisson (3) mélangée ;- une conduite de produit (21) pour : fournir un concentré (9) dans lequel sont contenus les ingrédients nécessaires au mélange de la boisson (3) et qui présente une teneur en eau inférieure à la boisson (3) mélangée ; et pour acheminer la boisson (3) mélangée ;- un dispositif de mesure (19) pour mesurer la concentration (KM) d'un ingrédient caractéristique de la phase de mélange (7) ; et- une conduite de mélange (25), reliée au réservoir (5) et à la conduite de produit (21), pour mélanger la phase de mélange (7) au concentré (9), étant précisé qu'il est prévu au niveau de la conduite de mélange un dispositif de dosage (29) pour régler le rapport de mélange volumétrique de la phase de mélange (7) et du concentré (9).
- Dispositif selon la revendication 1, étant précisé qu'il est prévu au niveau du réservoir (5) une conduite de circulation (17) pour la circulation de la phase de mélange (7).
- Dispositif selon la revendication 2, étant précisé que le dispositif de mesure (19) est disposé de manière à pouvoir mesurer la concentration (KM) dans la phase de mélange (7) en circulation.
- Dispositif selon l'une au moins des revendications 1 à 3, comprenant par ailleurs un dispositif de mesure côté entrée (31) pour mesurer la concentration (KK) de l'ingrédient caractéristique du concentré (9) et/ou un dispositif de mesure côté sortie (33) pour mesurer la concentration (KA) de l'ingrédient caractéristique de la boisson finie (3).
- Dispositif selon la revendication 4, comprenant par ailleurs un dispositif de régulation pour réguler le dispositif de dosage (29) sur la base d'une valeur de concentration (KK, KA) de l'ingrédient caractéristique qui a été déterminée par le dispositif de mesure côté entrée et/ou côté sortie (31, 33).
- Dispositif selon l'une des revendications 1 à 5, comprenant par ailleurs une conduite de recyclage (43) pour ramener dans le réservoir (5) la boisson finie (3), à partir de la conduite de produit (21).
- Dispositif selon l'une des revendications 1 à 6, comprenant par ailleurs une conduite de recyclage (45, 46) pour ramener dans le réservoir (5) la boisson (3') finie et traitée thermiquement, à partir d'un réservoir tampon stérile (11).
- Dispositif selon l'une des revendications 1 à 7, comprenant par ailleurs un dispositif collecteur (13), apte à être relié au réservoir (5), pour recevoir et recycler la boisson (3") finie et mise dans des bouteilles ou des récipients similaires.
- Procédé pour mélanger une boisson (3), en particulier à l'aide d'une part recyclée de boisson finie (3, 3', 3"), avec les étapes qui consistent à :a) recueillir une phase de mélange aqueuse (7) dans laquelle sont contenus les ingrédients nécessaires au mélange de la boisson (3) et qui présente une teneur en eau supérieure à la boisson (3) à mélanger ;b) fournir un concentré (9) dans lequel sont concentrés les ingrédients nécessaires au mélange de la boisson et qui présente une teneur en eau inférieure à la boisson (3) à mélanger ;c) mesurer la concentration (KM) d'un ingrédient caractéristique de la phase de mélange (7) ; etd) mélanger la boisson (3) en ajoutant ladite phase de mélange (7) au concentré (9), étant précisé que le rapport de mélange volumétrique de la phase de mélange et du concentré est réglé en fonction de la concentration (KM) mesurée lors de l'étape c), pour régler à une valeur cible la concentration (KA) de l'ingrédient caractéristique dans la boisson (3) mélangée.
- Procédé selon la revendication 9, étant précisé que lors de l'étape d), un débit volumétrique (VM) de la phase de mélange (7) ajoutée est adapté à un débit volumétrique (VK) du concentré (9) fourni.
- Procédé selon la revendication 9 ou 10, selon lequel lors de l'étape d), de l'eau (15) est également ajoutée pour régler la valeur cible dans la boisson (3) mélangée.
- Procédé selon l'une au moins des revendications 9 à 11, selon lequel lors de l'étape a), la boisson mélangée (3', 3") est recyclée dans la phase de mélange (7) à partir d'un réservoir tampon stérile (11) et/ou d'un réservoir collecteur (13), pour vider des récipients remplis.
- Procédé selon l'une au moins des revendications 9 à 12, selon lequel la concentration (KM) mesurée lors de l'étape c) est constituée par une teneur en sucre, en particulier par une valeur Brix.
- Procédé selon l'une au moins des revendications 9 à 13, selon lequel la concentration (KK) de l'ingrédient caractéristique dans le concentré de boisson et/ou la concentration (KA) de l'ingrédient caractéristique dans la boisson (3) mélangée lors de l'étape d) sont également mesurées.
- Procédé selon l'une au moins des revendications 9 à 14, caractérisé en ce que le concentré (9) et la phase de mélange (7) sont réunis lors du mélange de la boisson (3) sous forme d'amenées de dosage coulant en continu.
