Abstract

Dispositif de chauffe et de production de vapeur pour chauffer et produire de la vapeur dans l'atmosphère intérieure d'une enceinte (15) de four de cuisson pour aliments, comportant un brûleur à gaz (100), un compartiment de production de vapeur (5) thermiquement lié au brûleur à gaz (100), définissant une cavité périphérique (6) en communication avec l'enceinte (15) de cuisson du four par l'intermédiaire d'orifices de sortie de vapeur (7). Le dispositif comporte en outre des moyens d'amenée de liquides (8), aptes à amener des liquides tels que de l'eau dans ladite cavité périphérique (6) depuis l'extérieur du four.
