Abstract

Un proceso para aislar isoflavonas/fitoestrógenos de una proteína vegetal y producir proteínas vegetales para uso en productos alimenticios que tienenniveles reducidos de fitoestrógenos, manganeso y/o nucleótidos. Más específicamente lainvención se dirige a un proceso que utiliza tecnología deintercambio iónico para eliminar fitoestrógenos, manganeso o nucleótidos de proteína vegetales. Los fitoestrógenos eliminados o la proteína vegetal tratadapueden ser retenidos para procesamiento adicional. Los fitoestrógenos tienen utilidad como productos farmacéuticos. La proteína vegetal tratada tieneutilidad en productos alimenticios. Se refiere además a un aislado de isoflavonas preparado mediante dicho proceso y a una composición de proteínavegetal resultante del proceso de la invención.
