Abstract

Disclosed is a special nutritional food with the function of relieving physical fatigue, which comprises the following raw materials in percentage by weight: 10 - 50% of black bean and black rice flour, 5 - 25% of black sesame oil, 1 - 10% of longan powder, 5 - 15% of soybean protein isolate and 1 - 15% of hydrolysed whey protein. It also comprises the following raw materials in percentage by weight: 5 - 30% of maltodextrin, 1 - 15% of glutamine peptide and 10 - 25% of sugar powder. The invention also discloses a preparation method of the special nutritional food. The special nutritional food of that invention can be eaten after being concocted with boiled water, is convenient and quick, and is easy for consumers to accept; The present invention uses black soybean, black sesame and other foods as raw materials, and has delicate and fragrant taste. BACKGROUND
Black food is a traditional agricultural product resource for both medicine and food in China.
The Ming Dynasty medical book The Secret Book of Prolonged Life records that "taking black beans can make people grow skin, benefit colour and fill essence, such as strength, deficiency and food, and mystery". According to the Classic of Herbal Medicine, black sesame has the effects of "winning in the main injury, replenishing five internal organs, benefiting qi, growing muscles and filling marrow and brain". "Compendium of Materia Medica" said that taking black sesame seeds for 100 days can eliminate all chronic diseases. One year, you will not be hungry; two years later, your white hair will turn black; and three years later, your teeth will regress. Ancient agricultural medical books record that black rice "nourishes yin and kidney, keeps fit and warms stomach, improves eyesight and promotes blood circulation”. Dimocarpus longan, commonly known as "longan", is a rare specialty in the south subtropical zone of China. In history, there is a saying of "longan" in the south and "ginseng" in the north. Longan has the effects of benefiting the heart and spleen, invigorating gi and blood, and tranquilizing the mind. It is mainly used to treat debilitating diseases, insomnia, forgetfulness, fright and other diseases. In the Ming Dynasty, Li Shizhen once had the evaluation that "Longan is good for resources”. The first objective of the present invention is achieved by the following technical measures: a special nutritional food for relieving physical fatigue, which is characterized by comprising the following raw materials in percentage by weight: 10 - 50% of black bean and black rice flour, 5 - 25% of black sesame oil, 1 - 10% of longan powder, 5 - 15% of soy protein isolate and 1 - 15% of hydrolysed whey protein.
The special nutritional food of the invention also comprises the following raw materials in percentage by weight: 5 - 30% of maltodextrin and 1 - 15% of glutamine peptide.
In addition, adding the above two kinds of raw materials can improve the brewing characteristics of the product, and help to protect the gastrointestinal mucosa of the eater and promote the digestion and absorption of the product.
In order to suit the taste of consumers who like sweet taste, the special nutritional food further comprises the following raw materials in percentage by weight: sugar: 10 - 25%.

(2) preparing black sesame oil for later use: stir - frying black sesame until it is cooked to produce sesame flavour, then mixing and stir - frying black sesame and peanut oil according to the mass ratio of 2:1 - 2:2, and then processing into black sesame oil by colloid mill; (3) preparing longan powder for later use: drying dried longan at 50 - 70°C for 5 - 15 hours, mixing dried longan with maltodextrin according to the mass ratio of 2: 1 — 1: 4, freezing at low temperature of 0 - 4°C, and crushing to 60 - 100 meshes; (4) ingredients: black bean and black rice flour, black sesame oil, longan powder, soy protein isolate and hydrolysed whey protein are weighed according to the weight percentage of the formula and evenly mixed, (5) the semi - finished product obtained in step (4) is packed into inner packaging according to specifications, sealed and subjected to microwave sterilization.
In the above step (3), dried longan is sticky because of its high sugar content, so it cannot be processed into powder alone, and it needs to be mixed with maltodextrin and crushed into powder.
The colloid mill mentioned in the above step (2) is a kind of processing equipment, which mainly consists of stainless steel and semi - stainless steel colloid mills. The basic principle of colloid mill is that fluid or semi - fluid materials pass between fixed teeth and moving colloid grinding teeth in high - speed relative linkage, so that the materials are effectively crushed, emulsified, homogenized and warm, thus obtaining satisfactory finely processed products.

The experimental special nutritional food recommended daily dose of 90 9/60 (kg-bw) (3 packs per day, each pack of 30 g products) and 10 times dose pushed up to 180 g/60 (kg-bw) and 270 g/60 (kg bw) are used as subjects. The experimental results show that: (1) the weight - bearing swimming time of mice in different dosage groups of special nutritional food is longer than that of normal control group, and the difference is statistically significant (P < 0.05), indicating that special nutritional food can significantly prolong the weight - bearing swimming time of mice; (2) compared with the blank control group, the serum urea of mice in the middle and high doses of special nutritional food after exercise showed significant differences (P < 0.01 or P < 0.05), that is, the content of urea in mice's serum is significantly and extremely significantly reduced when the doses of special nutritional food are 30 g/kg and 45 g/kg respectively; (3) the content of hepatic glycogen in mice treated with special nutritional food after exercise is higher than that in the control group; among them, the hepatic glycogen content of mice in 30g/kg and 459/kg dose groups increased significantly (P < 0.05), while the hepatic glycogen content of mice in 15 g/kg dose group had no significant change; (4) compared with the control group, each dose group of special nutritional food can reduce the area under the blood lactic acid curve of mice, and there is a significant difference between the middle and high dose groups and the control group (P < 0.05).
To sum up, three doses of special nutritional food for 45 days can significantly prolong the weight - bearing swimming time of mice, and 30 g/kg and 45 g/kg doses can significantly and extremely significantly reduce the urea content in the serum of mice, and at the same time significantly reduce the area under the blood lactic acid curve of mice. In addition, the dosage of 30 g/kg and 45 g/kg can also increase the hepatic glycogen content of mice. The results show that special nutritional food can relieve physical fatigue in normal mice.

(3) preparing longan powder for later use: drying dried longan at 60°C for 12 hours, mixing dried longan with malt paste according to the mass ratio of 1: 1, freezing at low temperature of 0°C, crushing to 60 meshes, and bagging for later use; (4) ingredients: black bean and black rice flour, black sesame oil, longan powder, soy protein isolate and hydrolysed whey protein are weighed according to the weight percentage of the formula and evenly mixed; (5) the semi - finished product obtained in step (4) is packed into inner packaging according to specifications, sealed, sterilized by microwave sterilizer, and four magnetrons are turned on, the power of each magnetron is 700 W, the speed of the conveyor belt is 20 r/min, and the temperature of the sterilized product is 67°C; (6) cooling to room temperature of 25°C, and then packing in outer package; (7) finally sealing the box.
