Abstract
La presente invención se relaciona con el campo técnico de los alimentos, particularmente al campo técnico de la formulación de alimentos funcionales, más particularmente, se refiere a formulaciones de base proteica de lacto suero y galactomananos provenientes de semilla de algarrobo, conjugados con complejos vitamínicos y minerales, con efecto nutracéutico, preparadas mediante procesos de nebulización presurizada o ultrasónica, para ser empleadas como un alimento funcional que complemente la ingesta de proteina diaria en la alimentación del ser humano y a manera de ejemplo ilustrativo y no limitativo, reemplazan el uso de formulaciones de sustitutos de productos lácteos que presentan efectos nocivos al ser humano como es el caso de los sustitutos de crema para bebidas a base de café.
