Abstract
La presente invención se refiere a un proceso para producir un extracto de cáscara de cacao que contiene el ácido gamma-aminobutírico (GABA), el proceso comprende: a) extraer el GABA y las metilxantinas de las cáscaras de cacao con un medio acuoso para formar por esto una solución acuosa que contiene GABA y metilxantinas; b) remover al menos una parte de las metilxantinas de la solución acuosa con un solvente que es inmiscible en el agua; y c) retener la solución acuosa que contiene el GABA. Un extracto de cáscara de cacao que comprende GABA y metilxantinas en donde la proporción de GABA con respecto a las metilxantinas es de al menos 1:20 y también se proporciona un producto alimenticio que contiene tal extracto.
