Abstract

La presente invención se refiere a una composición de una mezcla enzimática que comprende una glucoamilasa, una alfa amilasa estable ácida, y una proteasa fúngica ácida. La presente además está dirigida a un método para la producción de productos finales tales como alcoholes de azucares fermentables, que comprende los pasos de: (a) poner en contacto una pasta aguda que comprende un grano molido que contiene almidón con una alfa amilasa para producir un licuado; (b) poner en contacto el licuado con una glucoamilasa, una alfa amilasa estable ácida y una proteasa fúngica ácida, para producir azucares fermentables; y (c) fermentar los azúcares fermentables en la presencia de un organismo de fermentación para producir productos finales.
