Abstract
La presente invención se refiere a un procedimiento para producir un producto de postre helado que contiene una composición crujiente dispuesta en capas superpuestas en su masa, que comprende los siguientes pasos: un listón helicoidal de producto de leche, de base de cereal, base vegetal o base de fruta es medido de manera continua a través de un orificio de salida para el producto de leche, de base de cereal, base vegetal o base de fruta, de una boquilla medidora; una capa de sustancia fundida destinada a formar la composición crujiente después de que se aplica el enfriamiento al listón helicoidal que se está formando, es medida de manera continua desde el inicio de su formación hasta el final de su medición, midiendo a través de al menos un orificio de salida de la boquilla medidora para la sustancia fundida; y la capa helicoidal de la sustancia fundida que así se forma es atrapada entre el primer listón de producto de leche, de base de cereal, base vegetal o base de fruta y un segundo listón helicoidal de producto de leche, de base de cereal, base vegetal o base de fruta, al medir de manera concomitante y continua el segundo listón de producto a través de un segundo orificio de salida de la boquilla medidora para el producto, de manera que el segundo listón se deposita sobre la capa helicoidal de la sustancia fundida que se está formando, simultáneamente con la sustancia fundida que entra en contacto con el primer listón helicoidal que se está formando.
