Abstract
Изобретение относится к пищевой промышленности, в частности к способу получения структурированных фруктовых снеков.Способ, согласно изобретению, предусматривает предварительную подготовку сырья, приготовление фруктовой массы с концентрацией растворимых сухих веществ 16…38% путем дозирования и смешивания подготовленного сырья, розлив фруктовой массы на листы или поддоны слоем 2…8 мм, сушку при температуре 48…62°С до достижения активности воды 0,48...0,60 и последующее охлаждение до температуры 25...30°С.
