Abstract
Postupak za proizvodnju pivkse šire koja može da uzavri od cerealnih zrna žita, koji sadrži faze: (a) rastapanje cerealnog materijala, pomoću α-amilaze i/ili aktivnosti endoproteaze radi dobijanja rastopljene smeše; (b) zaslađivanje pomenute rastopljene smeše u prisustvu α-amilaze; (c) filtriranje rastopljene i zaslađene smeše radi dobijanja pivske šire koja može da uzavri, gde se bar jedan od faza (a) i (b) vrši u prisustvu enzima koji ima aktivnost ekso-peptodaze. Korisni kao enzimi koji imaju aktivnost ekso-peptidaze su eksopeptidaze, posebno termostabilne eksopeptidaze, takve kao glivične amino-peptidaze ali su takođe korisne termostabilne karboksi-peptidaze. Naročito poželjne prema pronalasku su amino-peptidaze endogene sa Aspergillus fungi, poželjnije A. Niger, A. oryzae ili A. sojae.A process for producing a brewery that can boil from cereal grains, comprising the steps of: (a) dissolving the cereal material, using α-amylase and / or endoprotease activity, to obtain a dissolved mixture; (b) sweetening said molten mixture in the presence of α-amylase; (c) filtering the molten and sweetened mixture to obtain a brewing broth, wherein at least one of steps (a) and (b) is performed in the presence of an enzyme having exo-peptodase activity. Useful as enzymes having exo-peptidase activity are exopeptidases, especially thermostable exopeptidases, such as fungal amino-peptidases but also useful thermostable carboxy-peptidases. Particularly preferred according to the invention are amino-peptidases endogenous with Aspergillus fungi, more preferably A. Niger, A. oryzae or A. sojae.
