Abstract
Description
本願は、2022年5月11日に出願された日本国特願2022-078115号に基づき優先権を主張し、その内容をここに援用する。
この種の肉部剥離装置は、骨付き肉の肉部の適所に切込み装置によって予め切込みを入れておき、骨部の端末部を保持したクランパを上昇させつつ、ミートセパレータによって肉部を骨部から剥離させる。ミートセパレータは、骨付き肉の骨部の外周面に当接するように、肉部の切込みに差し込まれる削ぎ落し爪を有する。肉部剥離装置は、ミートセパレータの削ぎ落し爪を骨付き肉の骨部の外周面に押し付けた状態で骨部を上昇させることにより、骨部から肉部を剥離させることができる。
実際に骨付き肉から肉部を剥離させる場合には、骨付き肉の骨部の外周面にミートセパレータの削ぎ落し爪を当接させ、その状態で骨部を上昇させることにより、膝関節の腱や筋膜が露出する位置までミートセパレータによって肉部を剥離させる。次に、この状態においてカッター装置の丸刃を膝関節に近接させ、丸刃によって膝関節近くの腱や筋膜を切断する。この後に骨付き肉の骨部をさらに上昇させることにより、ミートセパレータによって残余の肉部を骨部から剥離させる。
本発明に係る削ぎ切り用丸刃は、丸刃本体の外周部に、当該丸刃本体の回転中心を中心とした円弧形状の複数の刃面が離間して配置されるとともに、隣接する前記刃面の間に非刃面部が配置され、前記非刃面部の径方向外側の端部は、前記刃面の径方向外側の端部よりも径方向内側に位置されていることを特徴とする。
したがって、本発明に係る削ぎ切り用丸刃を用いる削ぎ切り装置や削ぎ切り方法を採用した場合には、ワークが骨付き肉であるときに、肉部に対するスムーズな削ぎ切りによって製品である肉部の歩留まりの低下や、孔開き等の品質の低下を抑制できるうえ、刃先が骨部に食い込むことによる肉部への残骨の混入や、刃先のチッピングの発生を抑制することができる。
削ぎ切り装置1は、長手方向に延びる芯部の周囲に肉部(剥離対象部)が存在するワークから肉部を削ぎ切りによって剥離させるための装置である。一例を挙げれば、削ぎ切り装置1は、食鳥腿肉等の骨付き肉2(ワーク)の骨部bから肉部mを剥離させるのに用いられる。以下では、ワークの一例として、骨付き肉2である食鳥腿肉を例に挙げて説明する。食鳥腿肉(骨付き肉2)は、大腿骨b1と脛骨b2が膝関節b3によって連結され、脛骨b2の端部に足首b4が連結されている。
なお、図1に示す削ぎ切り装置1は、骨付き肉2の骨部bから肉部mを削ぎ切りによって剥離させる処理ステーションに設置されており、骨付き肉2は前処理を完了した状態で他の処理ステーションから搬送されてくる。前段の他の処理ステーションでは、例えば、脛骨b2の足首b4側端部の周域の肉部mに対する切込み入れ処理や、骨部bの長手方向に沿わせた肉部mの筋入れ処理等が行われる。各処理ステーションの間は、共通のクランパ10が骨付き肉2の足首b4を保持した状態で移動する。
昇降装置11は、骨付き肉2の骨部b(足首b4)を保持したクランパ10を所定速度で上昇させることにより、骨付き肉2の骨部bを、カッター装置12に対して上下方向に相対移動させる。本実施形態では、上下方向の位置を固定したカッター装置12に対し、昇降装置11が骨付き肉2の骨部bを上方に上昇させることにより、カッター装置12による肉部mの削ぎ切りが可能とされている。本実施形態では、昇降装置11が相対移動装置を構成している。
ただし、骨付き肉2の骨部bをクランパ10によって固定し、カッター装置12側を下方に移動させることも可能である。この場合、カッター装置12を下方に移動させる装置が相対移動装置を構成する。
なお、三つのカッター装置12は、カッター移動装置によって近接位置まで移動したときには、各削ぎ切り用丸刃15が骨付き肉2の骨部bの周囲を等間隔で取り囲むようになる。
本実施形態の場合、丸刃本体の外周部に配置される刃面17と非刃面部18とは、回転中心oを中心に等角度となる領域に交互に形成されている。
図4に示す状態では、クランパ10に保持された骨付き肉2がカッター装置12の削ぎ切り用丸刃15を通過する際に、膝関節b3回りの腱と筋膜が周囲の他の肉部mとともに削ぎ切り用丸刃15によって連続して削ぎ切りされる。
クランパ10に保持されて下降位置にある骨付き肉2は、前段の他の処理ステーションにおいて、脛骨b2の足首b4側端部の周域の肉部mに対する切込み入れ処理と、骨部bの長手方向に沿わせた肉部mの筋入れ処理を終えている。
こうして、骨付き肉2の大腿骨b1の上端部分が各カッター装置12の削ぎ切り用丸刃15の高さ位置まで上昇すると、その時点で削ぎ切り用丸刃15による肉部mの削ぎ切りは終了する。
したがって、本実施形態の削ぎ切り用丸刃15を採用した場合には、肉部mに対するスムーズな削ぎ切りによって製品である肉部mの歩留まりの低下や、孔開き等の品質の低下を抑制できるうえ、刃先が骨部bに食い込むことによる肉部mへの残骨の混入や、刃先のチッピングの発生を抑制することができる。
また、本構成の場合、刃面17と非刃面部18の間に凹状の段差部ができないため、削ぎ切り用丸刃15による肉部mの削ぎ切り時に、刃面17の回転方向の始端部や終端部に剥離した肉部mの破片が引っ掛かりにくくなる。この結果、削ぎ切り用丸刃15に肉片が堆積することによって肉部mの削ぎ切りが阻害されることが無くなり、肉部mの剥離をスムーズに継続させることが可能になる。
したがって、本実施形態の削ぎ切り装置1を採用した場合には、製品である剥離される肉部mの歩留まりをより高めることができる。
しかし、本実施形態のように、削ぎ切り用丸刃15を骨付き肉2の肉部mの削ぎ切りに用いる場合には、膝関節b3等の複雑な骨部bのつなぎ目があるうえ、骨部bに軟骨と硬骨が複雑に入り組んで混在することから、従来困難と思われていた骨部bからの肉部mの削ぎ切りを確実に実現することができる。
例えば、上記の実施形態では、丸刃本体の非刃面部18の径方向外側の縁部が、隣接する刃面17の刃先の周方向の端部17eを結ぶ直線形状に形成されているが、非刃面部18の径方向外側の縁部の形状はこの形状に限定されない。非刃面部18の径方向外側の縁部の形状は、少なくとも一部に曲線部等を含む非直線形状であっても良い。
ただし、非刃面部18の径方向外側の縁部が非直線形状の場合、その形状は、隣接する刃面17の刃先の周方向の端部17eを結ぶ直線と、刃面17の刃先を通る仮想円の間の領域からはみ出さない形状であることが望ましい。この場合、刃面17の強度の維持や、肉片の挟み込みの防止の観点から特に有利となる。

- 丸刃本体の外周部に、当該丸刃本体の回転中心を中心とした円弧形状の複数の刃面が離間して配置されるとともに、隣接する前記刃面の間に非刃面部が配置され、
前記非刃面部の径方向外側の端部は、前記刃面の径方向外側の端部よりも径方向内側に位置されていることを特徴とする、
削ぎ切り用丸刃。 - 前記非刃面部の径方向外側の縁部は、隣接する前記刃面の刃先の周方向の端部を結ぶ直線形状に形成されていることを特徴とする、
請求項1に記載の削ぎ切り用丸刃。 - 請求項1または2に記載の削ぎ切り用丸刃を有するカッター装置と、
ワークを保持するワーク保持部と、
前記ワークの肉部を削ぎ切りする削ぎ切り方向に前記ワーク保持部と前記カッター装置を相対移動させる相対移動装置と、
前記削ぎ切り方向に相対移動するワークに対し、前記削ぎ切り方向と交差する方向から前記カッター装置の前記削ぎ切り用丸刃を近接離反させる削ぎ位置操作部と、を備えていることを特徴とする、
