Abstract
Wood-fired oven comprising a fireplace (2) which can be placed on a support (3), or built in a suitable housing made in a building structure equipped with a chimney for fumes, a supporting structure (4) shaped as a vault or calotte which is placed on a base (5), the structure and the base forming a baking and combustion chamber, on said base (5) a refractory slab (51) being placed on which the food to bake is placed, on the top of said supporting structure (4) a duct (6) being present or fumes expulsion outlet which connects the internal chamber to a chimney whilst, in the lower part of the supporting structure, a suction duct (7) of the air from the outside into the oven is made, in the frontal side of the supporting structure (4) a door (8) being present substantially shaped like the calotte of the structure itself, through which you can load the wood or introduce the food to be baked, wherein both the supporting structure (4) shaped as a vault or calotte and the door (8) are made with a double wall so as to form within them a hollow space (9, 81) in which the air circulates ensuring natural ventilation.
Claims
1. Wood-fired oven comprising
• a fireplace (2) which can be placed on a support (3), or built in a suitable housing made in a building structure equipped with a chimney for fumes,
• a supporting structure (4) shaped as a vault or calotte which is placed on a base (5), the structure and the base forming a baking and combustion chamber,
• on said base (5) a refractory slab (51) being placed on which the food to bake is placed,
• on the top of said supporting structure (4) a duct (6) being present or fumes expulsion outlet which connects the internal chamber to a chimney whilst, in the lower part of the supporting structure, a suction duct (7) of the air from the outside into the oven is made,
• in the frontal side of the supporting structure (4) a door (8) being present substantially shaped like the calotte of the structure itself, through which you can load the wood or introduce the food to be baked,
characterized by the fact that both the supporting structure (4) shaped as a vault or calotte and the door (8) are made with a double wall so as to form within them a hollow space (9, 81) in which the air circulates ensuring natural ventilation, wherein on one side of the refractory slab (51) a combustion zone is made, under said slab and in correspondence of it, it is provided the said suction duct (7) of the air which is fitted with an air intake regulation valve (71), said suction duct (7) being a through duct which, by means of suction holes (53) made on the refractory slab (51), connects this duct to the combustion zone.

Oven as by claim 1, wherein the suction duct (7) of the air selectively allows air intake on one side or the other, depending on how the suction valve (71) is mounted, fitted with a knob (75) comprising, on one side, suction adjustment means (72) and, on the other side, a plug (73), joined to one another by means of a rotating rod (74) so as to allow any channeling of the air to the outside.
3. Oven as by claim 1, wherein, near the combustion zone, there is a removable support (10) for the supporting and the holding of the wood, keeping the holes (53) of the refractory slab (51) free so as to guarantee the forge effect.
4. Oven as by claim 1, wherein the supporting structure (4) is formed by an external sheet (41) and by an inner wall formed by a double sheet (42, 42').
5. Oven as by claim 4, wherein between the sheet (42') and the sheet (42) a thermal insulation layer (I) is inserted.
6. Oven as by claim 1, wherein multiple ventilation holes (43) are made at the lower extremities of the supporting structure (4) and at its top, preferably arranged along the whole thickness of the structure itself.

Oven as by claim 1, wherein the supporting structure (4) shaped as a vault or calotte, in the version of the oven realized for being built in a building structure, has an external sheet (41) separated from the internal one (42) which is integral with the supporting structure, whilst the external one is fitted with a base (44), so as to form a formwork, the oven being built-in by means of insertion and fixing, by first inserting and fixing the formwork into the building structure and, then, inserting the fireplace into the formwork itself.
8. Oven as by claim 1, wherein in the internal zone of the supporting structure (4) shaped as a vault or calotte, in correspondence of the combustion
zone, there is a fire-protection panel (12) that overlaps the internal sheet (42') of the supporting structure (4), said panel being positioned in a removable way thanks to a handle (13) that allows its release from a double bayonet joint (14), realized in the lower part and in the upper part of the panel itself.
9. Oven as by claim 1, wherein the supporting structure (4) shaped as a vault or calotte, simply placed on the base (5), is maintained in this position by means of fixing elements, for example, screws to said base (5), allowing freedom of expansion without modifying the position of said base (5).
10. Oven as by claim 1, wherein under this refractory slab (51) there is a thermally insulating layer (52).
11. Oven as by claim 1 , wherein the door (8) is fitted with a constraining hinge (83) provided with means for adjusting the inclination of the door itself so as one is able to keep the door always in vertical line in any condition.
12. Oven as by claim 1 la wherein said means for adjusting the inclination of the door (8) comprise a rotation pivot (84) of the door, maintained in position by a support (85) and an adjusting dowel screw (86) which is inserted into a support (85').
13. Oven as by claim 1, wherein the baking surface is revolving by means of a motor (92).
14. Oven as by claim 1, comprising an interactive electronic control system including a smartphone/touch panel (91) as a control interface.
15. Oven as by claim 14, wherein said system comprises control elements which communicate with the smartphone/control touch panel consisting of a first combustion chamber temperature probe (93), a second refractory temperature probe (94), a light sensor (95), a first rotary actuator (96) on the
"air" inlet valve, a second rotary actuator (97) placed on the fumes outlet valve, a door opening detection micro-switch (98).
