Abstract

L'invention concerne un procédé de fabrication d'une saucisse consistant à placer une composition de pâte à boyau de saucisse comprenant de l'alginate de sodium dans une cartouche (23) et à utiliser de la chair à saucisse comprenant un composé contenant du calcium. Une force est appliquée à la composition de pâte à boyau de saucisse dans la cartouche au moyen d'un dispositif de matage (22) pour extruder la composition de pâte à boyau de saucisse à travers une buse (28) de la cartouche. Ensuite, la composition de pâte à boyau de saucisse et la chair à saucisse sont co-extrudées dans une tête d'extrusion (16) de sorte que la composition de pâte à boyau de saucisse forme une couche de boyau entourant la chair à saucisse. La couche de boyau est ensuite exposée à un agent de prise qui homogénéise la couche de boyau autour de la composition de chair à saucisse pour former un boyau entourant la chair à saucisse. Le composé contenant du calcium est mélangé dans la chair à saucisse et améliore la réticulation et la liaison de l'alginate dans la composition de pâte à saucisse après coextrusion avec la chair à saucisse.
