Abstract
A method of brewing a coffee or tea beverage in a brewing apparatus. The apparatus comprises a container portion having' a side wall arid a bottom wall. The method comprises placing a quantity of solids to be extracted and water into said container portion, and agitating said solids and said water within said container by means of an ultrasonic resonator in contact with said bottom wall.

Technical Field This invention concerns the brewing of beverages and particularly tea and coffee beverages,
This invention mechanically a t c es or connects either permanently or temporarily an. ultrasonic resonator to the wall of a container either by affixing it to the wall through an adhesive,, fastening, clamping or welding process. A coupling medium such as an incompressible fluid, gel or material ma be used between the resonator and the container' s wall to enable the transfer of energy through mechanical vibrations, including vibrations at ultrasonic frequencies, from the resonator through the container's wall and into the liquid containin the coffee grounds.
BackaroMii
It is ell known in the pharmaceutical and food manufacturing radustries that the use of ultrasonics is an effective method for extracting caffeine from coffee. These industries rel solely on the insertion of an ultrasonieaily oscillating probe from abo ve into a fluid containing coffee grounds. The probe does not touch the sides of the container. But such apparatus is not. particularly suitable for domestic brewing of beverages. An aim of th present invention is to provide a method and apparatus which overcome these difficulties.
Summaiy ofliiv tion Accordingly, in om aspect the invention provides a method of brewing a coffee or te beverage in a brewing apparatus, said apparatus comprising container portion having a side wall and a bottom wall, said method comprising;
- placing a quantity of solids to be extracted hot water into said container portion, and
- agitating said solids and said water within said container by means of an ultrasonic resonator in contact with said bottom wall.
Said ultrasonic resonator may be housed within a base assembly upon which said container portion is placed during said agitation. Preferably said base assembly comprises an ultrasonic vibration generating portion to which is clamped a coupling portion including a coupling medium and said container portion is nested into said coupling portion so as to contaet said botto with said coupling medium
In one version said container portion is made of glass. In another versio said container is made of plastic, The container may be double walled o said side wall and bottom waif with said resonator within the gap between the inside wall and outside wall and said resonator is attached directly to the inside wall but not the outside wall
Preferably said coupling medium comprises a film of liquid or gel Said container portion may nest into said base assembly and thereb assist retention of the coupling medium against said bottom wall,
Said container portion may comprise a French press haying a cylindrical side wall and filter screen adapted to be manually pressed through said container portion, such that said method comprises depressin said screen through said container to separate extracted solids residu from said beverage.

Figure 1 is a see-through side view of apparatus according to a first embodiment of the present invention;

Figure 3 is a partiall see-through view of apparatus accordin to a second embodiment of the present invention.
French Presses, also known as Coffee Plungers, are used to prepare coffee, tea and other similar beverages. In the case of making a coffee bevmge, hot water is added to coffee grounds. The mixture is then stirred or agitated to extract flavosoids and caffeine. The beverage is then poured out of the .French press through a filter attached 5 to a piunger. The filte prevents the solid coffee grounds or tea leaves from entering the poured beverage.

The invention requires that an ultrasonic resonator (7) is able to transmit ultrasonic signals through a French Press's container wall (5) and into the liquid contained within the French Press (20), The French Press's container wall can be made from any D suitable material, including but not limited to Pyrex glass, plastics, and metals.

The base houses the resonator's electrical driver components, The resonator (7) is powered by an electrical circuit (10) supplying a 30 Watt, 28 K¾ drive signal for 20 seconds which is activated by a user pressing an activator switch button (1 1). The 20 second ultrasonic signal may be applied repeatedly by the user pressing the same button (11). It has been observed, however that repeated application of 20 second drive signals into th same brew only extracts a: relatively smaller amount of additional flavours and caffeine compared to the first 20 second application.
In embodiments where the base is to be detachable from the French Press* as shown in Figure 3, the resonator housin (6) provides a coupling medium or mechanism to enable transmission of ultrasonic energy from the resonator (7) to the French Press container (5), A coupling medium can be a fluid, gel or other incompressible material placed on top of the resonator housing.
A coupling mechanism can be a fastener or clamping device, Figure 3 shows a configuration utilising a remote electronics module ( 3) connected to the base via an electronic cable (12)* and utilising a base which is detachable between the resonator housing (6) and the French Press container (5),
The resonator is driven by m electrical circuit supplying a 60 Watt* 28 KHz drive signal for 30 seconds per brew. Both the drive signal's power, frequency and duration can be varied to best suit the size of the French Press attd the beverage consumer's taste. The duration for optimum extraction is between 15 and 29 seconds. The French Press container is made of brittle plastic. Coupling between the resonator (7) and the French Press container (5) i s achieved by gluing the resonator to the underside of the resonator housing's (6) middle thin metal layer, on top of which is a 2mm to 5mm layer of water,
The effect of Oltraso»ic mechanical energy oscillating at typically 2SKHz creates optimum cavitation on the g#$ce of coffee grounds. Cavitation can be thought of as a tnieroscopic and very strong vacuum effect occurring on the surface between a solid and a liquid, resulting in the effective separation of surface molecules. Cavitation is very efficient at extracting flavonoids and caffeine from coffee grounds. The result is thai more flavour and caffeine is extracted from a coffee beverage than would otherwise be extracted from a French Press without the use of ultrasonics.
Whilst the above description includes the preferred embodiments of the invention, it. is to be understood that many variations, alterations, modifications and or additions may be introduced into the constructions and arrangements of parts previously described without departing from the essential features or the spirit or ambi of the invention. For example the container in which the brewing extraction takes place need not be a French Press. It can be a container having no filter which can be depressed. In such embodiments a heating wand ma be inserted into the liquid from above in order to heat up the liquid or maintain its elevated temperature. It will be also understood that where the word "comprise", and variations such as "comprises" and Comprising'*, are used in this specification, unless the contest
requires otherwise such use is intended to imply the inclusion of a stated feature or features hut. is not to be taken as exeiuding the presence of other feature or features.
The reference to any prior art in this specification is not, and should not be taken as, an acknowledgment or any form of suggestion that such prior art forms part" of the common general knowledge in Australia.

1. A method of brewing a coffe or tea beverage in a brewing apparatus, said apparatus comprising a container portion baying a side wall and a bottom wall;, said

- placing a quantity of solids to be extracted and water into said container ortion^ and
- agitating said solids and said water within said container by means of an. ultrasonic resonator in contact with said bottom wall
