Abstract

L'invention concerne un procédé amélioré d'extraction de collagène à partir d'animaux aquatiques, qui comprend un traitement alcalin, suivi d'un traitement à l'acide en combinaison avec une séquence ordonnée de traitements physiques et/ou mécaniques et de précipitation du collagène à l'aide d'une solution saline. Le procédé augmente le rendement et la qualité du collagène tout en diminuant le temps de production; il est plus économique que les procédés connus jusqu'à présent. L'invention comprend en outre le collagène obtenu et des produits le contenant.
