- FIG. l An embodiment as shown in FIG. l relates to a cooking machine 10 comprising a belt conveyor, for transferring heat between the conveyor belt 11 and a food product transported by the conveyor. Further, the cooking machine 10 comprises at least one heat transferring element 12 arranged under the conveyor belt 11. By arranging the belt in contact with the heat transferring element 12, heat may be transferred conductively between the conveyor belt 11 and the heat transferring element 12. Thus, heat may be transferred between food products transported by the belt conveyor and the conveyor belt 11. Accordingly the cooking machine 10 may be used to heat, e.g. broil, food products in a continuous manner. Further, the cooking machine 10 may also be used to cool food products.

Abstract
L'invention concerne un appareil (10) de cuisson comprenant un convoyeur à courroie, permettant de transférer la chaleur entre la courroie (11) de convoyeur et un produit alimentaire transporté par le convoyeur et un élément (12) de transfert de chaleur agencé sous la courroie (11) de convoyeur de telle sorte que la courroie (11) soit en contact avec l'élément (12)de transfert de chaleur, permettant ainsi à la chaleur d'être transférée par conductivité entre la courroie (11) et l'élément (12), l'élément (12) de transfert de chaleur comportant une ouverture (13) dans une surface de l'élément (12) de transfert de chaleur en contact avec la courroie (11) de convoyeur et de sorte que ladite ouverture (13) soit raccordée à une installation (14) d'aspiration. Les plaques (121, 122) de transfert de chaleur sont agencées de telle sorte qu'un espacement (131) entre les plaques forme ladite ouverture (13) et de sorte que la courroie soit en contact avec les plaques (121, 122) de transfert de chaleur. La surface de chacune des plaques (121, 122) comporte au moins une rainure (15) en liaison avec l'espacement (131) et au moins une des plaques de transfert de chaleur est une plaque de refroidissement formant une zone de gel.
