  • Whey is the liquid remaining after milk has been curdled and strained. It is a byproduct of the manufacture of cheese or casein and has several commercial uses. Liquid whey contains lactose, vitamins, protein and minerals along with traces of fat. It can be processed into several streams to be used by other industries. It can be dried to obtain whey powder, it can be crystallized to separate the whey into lactose and delactosed whey, and it may be ultrafiltrated into whey protein concentate and permeate. The permeate may be subjected to crystallization to obtain lactose and delactosed permeate.

A dry matter content of 37.1 % on weight basis could be yielded.

Abstract

Cette invention concerne un procédé amélioré de séchage de fragments de parois de cellules eucaryotes et de lactosérum et/ou de produits dérivés du lactosérum par évaporation conjointe. Ce procédé permet d'obtenir un mélange concentré qui peut ensuite être transformé en aliment ou en composition alimentaire constituée d'autres ingrédients alimentaires, ou qui peut être de nouveau séché pour obtenir un produit d'association sensiblement sec. Ce produit d'association sensiblement sec peut également être utilisé dans un aliment ou dans des compositions alimentaires.
