Abstract

La présente invention porte sur un procédé de préparation d'une solution gélatineuse à partir de couennes de porc, lequel procédé comprend : a) l'étape de prétraitement des couennes de porc, consistant à plonger les couennes de porc dans une solution acide; b) l'étape d'élimination de l'huile des couennes de porc, consistant à placer les couennes de porc prétraitées dans de l'eau, à chauffer l'eau pour les faire bouillir pendant 1 à 5 minutes, puis à sortir les couennes de porc hors de l'eau pour les laver; c) l'étape consistant à chauffer les couennes de porc dont l'huile a été éliminée et des plantes médicinales, conjointement avec de l'eau dans des conditions de pression d'environ 0,7 à 1 kgf/cm2 et à maintenir l'état d'ébullition pendant 5 à 7 minutes pour extraire la gélatine des couennes de porc; et d) l'étape consistant à séparer les plantes médicinales du produit obtenu à l'étape c) puis à mélanger le restant avec un mélangeur. En outre, la présente invention porte sur le muk (aliment gélifié), le juk (porridge) et des boissons liquides préparées à partir de la solution gélatineuse selon le procédé.
