Abstract

본 발명에서는 독성을 제거한 옻나무 추출물로부터 배양된 칠황버섯 균사체의 배양방법을 제시한다. 칠황버섯은 독성을 제거한 옻나무에서 자생하는 버섯으로 옻나무의 유용한 성분들을 이용하기 위해 다양한 실험을 하는 도중 발견된 새로운 버섯이다. 그러나 옻나무 원목이나 옻나무를 톱밥으로 제조한 배지에서는 배양기간이 2~3년 이상으로 긴 시간을 필요로 하여 칠황버섯을 대량으로 단시간에 배양할 수 있는 균사체 배양법을 고안하였다. 또한 상기 칠황버섯의 균사체를 이용하여 된장, 간장, 고추장 및 청국장을 제조하였는데 종래기법으로 제조되던 된장, 간장, 고추장 및 청국장에 비해 맛과 풍미가 좋아졌고 이취가 줄어들었다. 이 외에도 칠황버섯 균사체의 영향으로 상기 된장, 간장, 고추장 및 청국장은 종래기법으로 제조되던 된장, 간장, 고추장 및 청국장보다도 저염 상태에서 제조가 가능하였고 항산화 효과도 있는 것으로 확인되었다.
