Abstract

加熱時に起こる着色および加熱臭を長期にわたって抑制し、かつ風味の優れた揚げ物用油脂組成物の製造方法を提供する。本発明の製造方法は、精製された食用油脂に、原油および中間的油脂から選ばれる少なくとも一種のリン由来成分をリン分が0.1~5.0ppmとなるように添加することを特徴とする。
