Abstract

【課題】 新規なカカオ酒及びその製造方法を提供すること。 【解決手段】 このカカオ酒の製造方法は、カカオ豆自体を発酵させて製造する。具体的には、(1)カカオ豆を用意し、(2)カカオ豆を粉砕して水に浸漬し、(3)カカオ豆を蒸し、(4)蒸したカカオ豆に対して、(i)こうじ及び酵素の両方又はいずれか一方と、(ii)酵母と、 (iii)糖分のある果実又はその果汁と、(vi)水とを加えてアルコール発酵させる、諸段階を含む。ここで、カカオ豆の粉砕・浸漬工程(3)の後で、アルコール発酵工程(4)の前に、(3-1)蒸したカカオ豆に対して、(i)こうじ及び酵素の両方又はいずれか一方と、(ii)酵母と、 (iii)糖分のある果実又はその果汁と、(vi)水とを加えて、酵母の増殖を促す酒母工程を設けてもよい。
