Abstract

It is intended to provide a liquid seasoning such as soy sauce, a liquid seasoning containing soy sauce (Tsuyu, Dashi shoyu, Tare, dressing, ramen soup, Ponzu sauce, etc.), sauce, vinegar, or Sake for cooking, which can markedly suppress an increase in blood pressure. The invention relates to a liquid seasoning obtained by adding and incorporating a liquid koji hydrolysate of soybean obtained by adding and mixing liquid koji in soybeans and reacting them with each other at 25 to 55°C for 12 to 168 hours, and γ-aminobutyric acid in a liquid seasoning such as soy sauce or soy sauce containing potassium chloride.
