Abstract
What is described is a chemical and physical method applied to plant matrices containing ascorbic acid for isolating the ascorbic acid and obtaining mixtures with a high concentration. The process is based on the selective precipitation of ascorbic acid from the juice of the aqueous extract of the aforesaid matrices by the addition of hydroxide of calcium or barium, or salts of calcium or barium, for basic hydrolysis in the presence of a cosolvent, followed by filtration. The method according to the invention also makes it possible to obtain a natural product rich in ascorbic acid in combination with other natural substances including organic acids (malic and citric acids), polyphenols (flavonoids, gallates, and catechins) and glucosides and other substances with acid properties. The resulting product has an ascorbic acid content varying from 10% to the pure substance.
